Brownie Batter Overnight Oats

My Brownie Batter Overnight Oats recipe has become a quick household favorite due to its ease of production & mad flavorful taste. Seriously, it is SO easy to make. All you need is a jar with a secure seal, a short list of simple ingredients, a quick stir, and boom, you have breakfast. Who amazing is that?

I wouldn’t be hyping this recipe up so much if I didn’t truly love it because (Fun Fact) I haaaaaaate oatmeal. I have tried for years and years and years to get myself to enjoy warm oats. I have baked them, flavored them, done everything under the sun imaginable to get oatmeal to be tasty and after one simple bite, I am so grossed out. It is totally a textural thing for me. And it sucks, because I wanted to love them so bad.

But, then I discovered overnight oats. Well, more specifically, I discovered a brand of pre-made vegan overnight oats called Mush. I worked at Whole Foods during the majority quarantine and became a big-time impulse buyer based off of the positive reviews of shoppers coming through my line. One day, a woman came charging up and was raving about her excitement that this brand of overnight oats was on sale because it was all she could get her picky-eater children to consume for breakfast. I, being the easily-influenced-to-buy-new-food-products gal I am, bought a few to try post-shift. And holy crap, I loved it. I had discovered my oatmeal sweet spot.

Overnight Oats are currently my breakfast obsession, but of course I had to get a little funky with it. And then came this recipe. These Brownie Batter Overnight Oats are a chocolate-y explosion of goodness in every bite. They are incredibly filling (in a good way) and leave me happily satiated for hours. It really does feel like I am enjoying dessert for breakfast each and every morning. And don’t even get me started on the saucy berry topping. It is a perfectly spoonable addition to any cold bowl of oats and I can’t get enough of it.

Brownie Batter Overnight Oats

Ingredients
  

Brownie Batter Oats

  • cup old-fashioned oats
  • tbsp cocoa powder
  • 2 tsp chia seeds
  • ¼ cup non-dairy yogurt (or greek)
  • cup almond milk
  • 2 tbsp mini chocolate chips
  • 1 tbsp honey or maple syrup (plus more to taste)

Saucy Berry Topping

  • 1 cup frozen mixed berries
  • 1 tbsp maple syrup
  • More mini chocolate chips

Instructions
 

  • To a mason jar or small bowl with a lid, add all of the above ingredients (oats, chia seeds, cocoa powder, yogurt, milk, mini chocolate chips & sweetener) and stir to combine. Make sure to scrape the bottom of the jar a bit so that everything gets equally coated.
  • Cover the overnight oats container securely with a lid and set in the refrigerator to soak overnight.
  • The next morning, open your overnight oats and either scoop into another bowl and add toppings, or decorate as is. I like to pair these brownie batter overnight oats with a saucy berry topping and more mini chocolate chips.
  • To make the saucy berry topping, simply place 1 cup of frozen berries in a microwave safe bowl and microwave for 20-30 seconds. Remove and stir in the maple syrup and mash lightly with a fork until a thick, yet saucy consistency is reached. The fruit will still be cold (which I prefer), but you could always microwave it for a full minute to create a warm berry topping.

Notes

Overnight Oats will keep in the fridge for 2-3 days, so you can always prep a few jars in advance! I prefer making one at a time because I find them tastiest when consumed within the first 12-24 hours of production. Overnight Oats are not freezer friendly. 

Preparing these overnight oats before I fall into slumber makes waking up each morning even sweeter. It kind of feels like leaving a surprise gift for yourself. Who? Me? You shouldn’t have, me!!! (that was me speaking to me about how happy I am to be consuming overnight oats.
