I know you are here for the cups, but I thought I would sprinkle in a little life update for you all. SO, here she goes. Almost two months ago, I moved back home from my (super) senior year of college in Missouri due to COVID-19. In five short days, I will be (virtually) graduating from said college with a Bachelors of Science in Dietetics. With everything going on right now, this huge accomplishment has yet to set in. I am living at home in Illinois for the first time in 5 years, lovingly stuffed into a two-bedroom apartment with my mother and brother. We are safe and healthy and I am aware that I am incredibly fortunate. I do still throw myself the minor pity-party here and there, but embracing my emotions and allowing myself to truly feel them as they come has helped a lot in making this scenario easier to cope with. Life is weird right now, but it is also okay. This is probably the last time I will live with this crew, so I am soaking it up. Lots of dinners. Lots of movies. Lots of laughs. Moments I will always cherish and never get back since I will soon be heading off into the real world to begin my Dietetic Internship at Lipscomb University Nashville, TN. So, I will take this moment of stillness for what it is, a chance to spot all the little joys in the mundane. For example, I got to pet a dog the other day for the first time in like a month and I almost cried it was so amazing. Seriously. Dogs are the best. Anywho, let’s get back to the reason you popped by in the first place: Cookie Dough Cups.

To be honest, I don’t know why/how I did not come up with this idea sooner, but I am so glad I did. These dark chocolate cups of deliciousness are the perfect bite-size treat you can (and should) enjoy at any and all times of the day.

Let’s dive into this sweets origin story. About a month ago. I made a batch of my Dark Chocolate Chunk Cookies and saved 1/2 the dough for later baking. Well, that later baking never came and I was left pondering what to do with the block of cookie dough taking up space in my freezer. I am NOT a candy person. If I am going sweet, I am going baked. And by baked I mean brownies, cookies, cakes, etc., not the other baked silly. Duh!! (haha dad joke ha) But for some unbeknownst reason, the idea for these cups popped into my head after I discovered a mini muffin tin hidden in the depths of my mom’s baking cabinet. I located some dark chocolate, a microwave safe bowl, and the rest is history.

These cups are killer, and I mean that with love. Their dark chocolate shell encompasses the sweetest surprise of all time, my ~healthied~ Dark Chocolate Chunk Cookie Dough, made from none other than…chickpeas! The most versatile little bean. ALSO, I can’t get over just how easy these cups are to make. Store them in the freezer. Carry them in your purse. Eat them at the gym while you’re walking on the treadmill watching Netflix. Ok, so maybe the last thing is more of a me thing. And maybe don’t snack at the gym. Those places are petri-dishes. But, we love them nonetheless!! Alright, enough rambling. Let’s get to cookie-DO-ughing. (Get it? Like cookie do. Like “let’s do this” but instead of do it’s dough because we are making cookie dough cups. Get it? You get it. She get’s it. We get’s it.)

So, let’s get it. Ready, set, bake!

Healthy Cookie Dough Cups

If a Reese's Peanut Butter Cup and a Chocolate Chip Cookie had a baby, and the baby was somehow healthy. Meet my healthy Dark Chocolate Cookie Dough Cups!

Equipment

  • Food Processor

Ingredients
  

  • 1/2 batch of my Dark Chocolate Chunk Cookie Dough (on the blog)
  • 1 1/2 cups of dark chocolate chips
  • Optional: flaky sea salt for sprinkling

Instructions
 

  • If your cookie dough is frozen, make sure to unthaw it so that it can be easily scooped into the cups. It should be cold and pliable, not frozen.
  • Line a mini muffin pan with 10 mini liners. You can easily double the recipe if you would like.
  • In a microwave safe bowl, melt 1/2 of the dark chocolate chips (about 3/4 cups). Microwave in 30 second increments until chocolate is melted. The chocolate can also be melted in a small sauce pan over low heat.
  • Once chocolate is melted, spoon about 1 heaping teaspoon into the bottom of each cup. Use the spoon to spread/push the chocolate all the way up the sides of each liner. If you run out of chocolate, melt some more and continue the process.
  • Once all cups are filled, place the pan and cups into the freezer for a couple minutes to harden. (~3 minutes)
  • Once the chocolate is hardened, remove from freezer and spoon the cookie dough into the cups, about 1/2 tbsp worth of dough. The dough should fill to the top, so add/remove as need be.
  • Place the pan back in the freezer while you melt the remaining chocolate chips.
  • Spoon about 1 tsp of melted dark chocolate on top of the cookie dough, making sure to cover the filling entirely. If you so desire, sprinkle a little flaky sea salt on top of the chocolate before it hardens. Freeze for 8-10 minutes.
  • Once cups are firm and the chocolate is set, enjoy! Cups can be stored in the fridge or freezer until ready to be snacked on. (I would 10/10 recommend the freezer though)

Notes

  • Feel free to double this recipe if you want more cups. 
  • If you are not a fan of dark chocolate, you can easily sub in milk chocolate.
