Lemme introduce you to my latest and greatest lightened up creation, Rotisserie Chicken Salad.
I have never been a big chicken salad person. It was always too heavy, too mayo-forward, and never had enough crunch for my liking. But, no longer shall we dwell in the ways of the past!! No more sad chicken salad. I took it upon myself to make a lightened up version that is still crazy flavorful but doesn;t weigh you down after a few bites
The key swaps I made to ~health-ify~ & customize this chicken salad were simple. I added in greek yogurt for creaminess, tossed in more grapes for crunch, and added in a splash of dijon mustard for tanginess. It is so simple, so refreshing, & just so, SO good.
So, without further ado, here is the recipe! Enjoy.
Rotisserie Chicken Salad
Ingredients
- 1 rotisserie chicken (hot or cold)
- 3 celery stalks, finely chopped
- ½ cup red onion, finely chopped
- 2 cups red grapes, sliced in ½
- 2 tbsp cilantro (or herb of your choosing)
- ½ cup plain greek yogurt
- 2 tbsp mayonnaise
- ½ tbsp dijon mustard
- 1 tsp vinegar (rice or white)
- ½ tsp salt
- ¼ tsp pepper
Instructions
- Pull the meat from the bones of the rotisserie chicken & coarsely chop the chicken up.
- Add all of the ingredients together in a large bowl and mix until fully combined.
- Add additional salt and pepper to taste.
- Refrigerate for 10 minutes to allow to chill. Serve and enjoy!
- Store remaining chicken salad in an airtight container in the fridge for up to 4 days.
Once your rotisserie chicken salad is ready to go, serving it up is fully customizable to you! Here are a couple of my favorites:
- Chicken Salad Lettuce Cups: serve the chicken salad with stalks of romaine & eat ’em like a wrap.
- Chicken Salad Pita: serve your chicken salad up in a warmed pita or even with a side of pita chips for dipping.
- Chicken Salad Cucumber Bites: slice up cucumbers and spoon bite-sized portions of chicken salad onto each slice.
- All by itself: Seriously, this chicken salad is so tasty it doesn’t need anything but itself to really shine.
